What is Rice Noodles?

Rice noodles are noodles made from rice flour, instead of wheat flour. They are white, unlike cream colored wheat noodles and come in different sizes. Some rice noodles are long and flat and look similar to fettuccine. Others are long, thin and round and look a lot like angel hair pasta. When rice noodles are uncooked they are hard and break easily. When cooked, they are soft while still holding their form and are a bit more slippery than a wheat-based noodle. Rice noodles taste bland and delicate. They pair well with flavorful foods.
