What is Fuki?

Fuki is a vegetable used in Japanese cuisine. It is also known as butterbur and sweet coltsfoot. The buds and stalks of the plant are eaten, but are first treated with ash or baking soda to remove the astringent flavor and to reduce compounds in the plant that can be harmful to the human body in large quantities. The buds are green and formed of tight clusters. The stalks are tan, bulb-like and have a firm consistency. The flavors of this plant are mild and bitter. Fuki is used in savory spreads and stir-fries.
